Hand-Crafted Creations
The Art of Hand-Crafted Creations at Tucson Chocolate Factory
Welcome to the heart of Tucson Chocolate Factory, where every piece of chocolate tells a story of passion, precision, and the Sonoran Desert's vibrant spirit. Founded by chocolatier Armando Bezies in 2022, our hand-crafted creations are more than confections—they're a celebration of ethical sourcing, local ingenuity, and the transformative magic of chocolate-making. In Tucson's UNESCO City of Gastronomy, we draw inspiration from the desert's bounty to craft award-winning chocolates that honor our region's flavors and heritage.
Our Philosophy: From Bean to Bonbon with Intention
At the core of our work is a commitment to quality and sustainability. We begin with the finest, ethically sourced cocoa beans imported from regions like Bolivia, where small-scale farmers cultivate varieties bursting with complex notes of fruit and earth. These beans undergo a meticulous bean-to-bar process in our Tucson kitchen: roasting to unlock their inherent aromas, grinding into smooth liquor, and conching for hours to refine texture and flavor. No shortcuts, no machines dictating the outcome—every batch is overseen by hand to ensure harmony.
But chocolate alone isn't enough. We infuse our creations with locally sourced ingredients from Southern Arizona's farmers markets and Indigenous partners, like Tohono O'odham farmers providing saguaro fruit syrup. This fusion of global cacao and desert treasures—prickly pear, mesquite honey, chiltepin peppers, and agave nectar—creates flavors that are uniquely Southwestern. Our confections, from silky caramels to ganache-filled truffles, are made in small batches, hand-piped, tempered by feel, and often hand-painted for that personal touch. It's a labor of love that transforms simple ingredients into decadent experiences.
The Crafting Process: A Symphony of Senses
Creating our hand-crafted chocolates is an alchemical ritual divided into key stages:
- Sourcing & Inspiration: We scout local gems—zesty citrus from Tucson orchards, fiery ancho chiles from regional farms, and wild mesquite blossoms—for their fresh, bold profiles. Ethical cocoa arrives traceable and vibrant, ready to dance with these locals.
- Preparation & Infusion: Ingredients simmer and steep. Caramels bubble with agave nectar and fresh vanilla beans scraped by hand; ganaches bloom with whiskey or fruit purees. We taste at every turn, adjusting for balance—like a whisper of ginger to brighten orange zest.
- Tempering & Assembly: Chocolate is melted, seeded, and tempered on marble slabs for that signature snap and shine. Fillings are enrobed in thin shells, then chilled just enough to set without rushing the flavor marriage.
- Finishing Touches: Truffles are hand-dipped, painted with cocoa butter colors, and crowned with gold flakes or pistachio dust. Bars are scored and wrapped, each one a canvas of our artistry.
This process isn't industrialized—it's intimate, yielding limited runs that sell out fast. As Armando says, "I fell in love with how dramatically the ingredient can transform from its raw state." The result? Chocolates that evoke Tucson's sun-soaked resilience.
Spotlight on Our Hand-Crafted Stars
Our Hand-Crafted Creations lineup showcases this dedication through real, desert-kissed examples. Here's a glimpse into a few favorites, each born from experimentation and the land:
Prickly Pear & Ancho Honey
This decadent duo layers our signature prickly pear caramel—vibrant pink from foraged cactus fruit native to the Sonoran Desert—with a rich ancho chile mesquite honey dark chocolate caramel. Hand-piped into dark chocolate shells, it's a Southwestern symphony: sweet-tart fruit meets smoky spice and floral honey. We source the prickly pear seasonally for peak freshness, reducing it slowly to capture its wild essence. Perfect for those craving a taste of Tucson's thorny beauty. Available in boxes of 4 or 8 for $9–$17.
Ancho Mesquite Honey
Inspired by desert sunsets, this dark chocolate caramel infuses ancho chili powder with local mesquite blossom honey, gathered from blooming trees after monsoon rains. The honey's earthy depth tempers the chili's gentle heat, all enrobed in a crisp dark shell. Hand-tempered and molded one by one, it embodies our commitment to foraged flavors—mesquite honey is a Tucson staple, transforming ordinary caramel into liquid gold. Boxes of 4 or 8, $9–$17.
Lemon Agave Caramel
Bright and zingy, this caramel starts with local agave nectar simmered to golden perfection, brightened by fresh lemon zest and specks of vanilla bean scraped from pods sourced nearby. Hand-filled into milk or dark shells, it's a refreshing counterpoint to richer profiles, evoking citrus groves under Arizona skies. We craft it in small kettles, stirring by hand to achieve that silken pull. Available in 4- or 8-piece boxes, $9–$17.
Dubai Chocolate Bars
Our modern twist on a viral sensation: house-made pistachio cream, layered with crispy knafeh (shredded phyllo dough baked to golden crunch), all encased in ethically sourced 70% dark or milk chocolate. The bars are hand-assembled, pressed, and tempered for an unbelievably snappy bite. Pistachios are roasted in-house, and the knafeh spun fresh— a nod to global influences meeting Tucson innovation. Award-worthy indulgence. $12 per bar.
Bolivia 70% Dark Chocolate Bar
Purity meets precision in this single-origin bar from Bolivian cacao, roasted lightly to highlight notes of red fruit and nuts. We've won silver medals at the International Chocolate Awards in 2024 and 2025 for its clean, balanced profile. Hand-ground and conched for 24+ hours, it's molded into sleek slabs—minimalist artistry that lets the bean shine. Ideal for purists. $8 per bar.
Desert Sampler Variety Box
The ultimate introduction: a curated assortment of our hand-crafted gems, like saguaro fruit caramel (made with syrup from Tohono O'odham partners), chiltepin whiskey ganache, and Mexican hot chocolate truffles. Each piece is hand-painted and color-coded per our Flavor Guide, blending local chiles, fruits, and honeys. It's an edible map of Tucson, assembled with care for gifting or savoring.
